It seems to be heating up everywhere and this is the perfect time of year to keep the stove off!  Summer salads are an easy and luscious way to nourish your body when all you want to do is lay on the beach.  This dish can be made quickly, packed up and taken with you to your favorite summer destination.  The cumin and orange juice create a beautiful flavor combination to perfectly dress this crunchy salad.

Crunchy Carrot Salad

with Pumpkin Seeds, Orange & Cumin

serves 4

  • 4 cups shredded carrot
  • 2 cups shredded cabbage
  • 1/4 cup thinly sliced onion
  • 1/4 cup orange juice
  • 3 TB pumpkin seed oil, hemp oil or olive oil
  • 6 TB pumpkin seeds
  • 3/4 teaspoon cumin
  • 1/2 teaspoon salt
Toss all ingredients in a large bowl.  Mix very well.  Serve and enjoy with deep pleasure.
